Scarlett turns 1!

What a milestone! Our little girl had her first birthday in September. She is growing up so fast. She has all of her teeth, she's running around, trying to sound out words when we say them to her. Well, as some of you know, Mickey Mouse is Scarlett's most favorite character EVER! She will drop whatever she's doing if she sees him. So, of course, I had to make her a Mickey cake. This is the first cake I've done like this, and it turned out great. Way better that I had imagined. And I also did cupcakes. Chocolate with vanilla buttercream. 




 

Tori's Birthday cupcakes

These are Double Chocolate cupcakes that I made for Tori on her birthday. She came over, and our two beautiful daughters had a play date. And Scarlett took her first steps as well!!

Campfire cupcakes!

Tis the season...... For s'mores!

My latest creation, Campfire cupcakes. Chocolate cupcakes with vanilla butter cream. (I haven't yet perfected the marshmallow buttercream) Sprinkled with cinnamon and a mini s'more!


 

Happy 4th of July!

Happy 4th everyone! (I know, it's August...) 

I made these cupcakes for my Mom's house. We had a nice bbq with the family. Chocolate cupcakes (the most popular so far I guess!) with blue vanilla butter cream and star sprinkles.




Chocolate!

These cupcakes are chocolate with a chocolate butter cream frosting. The best chocolate butter cream I've ever tasted..... This frosting is so creamy and fluffy, it's dangerous!




 

Graduation Cupcakes

On May 27th 2011, my little sis graduated high school! This entry is long overdue, but that's what happens with an 11 month old (trying) to run everywhere! So, first of all, congratulations to Kelsey! 

The cupcakes I made for her graduation party were Pina Colada, (requested by Kelsey) and Red Velvet. (Requested by Mom, and they are her school colors) The Pina Colada are pineapple cupcakes (with crushed pineapple) topped with coconut cream cheese frosting (a little rum never hurt!) And sprinkled with toasted coconut. And the red velvet are my red velvet cupcake with cream cheese frosting topped with red and white sprinkles.










On May 27th 2011, not only did my sister graduate, but my Grandmother passed away. She was one of the strongest women I know, and I know she is so proud of you Kelsey. We love you Grammy, forever and always. I'm so glad that my daughter got to spend time with you.

Banana crumb muffins

Mmmmm. Yes please, this is what I want for breakfast! Homemade banana crumb (no walnuts, yuck!) muffins. Heat these up with some butter and they are so good. I need to make some more soon!

Prom Cupcakes for my sisters!

My two beautiful younger sisters had there prom in May. I decided to surprise them with some mini cupcakes. I colored the frosting to match their dresses! Also, added some fun sprinkles. They came out so cute and really tasty! Everyone seems to like the minis. They were my chocolate cupcake with a vanilla butter cream. 



 

It's been too long!

Welcome back, Self. The last time I updated my blog was in May! I haven't been busy or anything trying to keep up with my now, almost 10 month old daughter. She's hard work! But I wouldn't trade motherhood for anything. It's so rewarding. :) While I've been absent, we've brought Scarlett on her first trip to the beach (twice) and to the river. Needless to say, she LOVES the water! Here are a couple of pictures from out adventures. Then I'll get back to cupcakes......I promise!

Almond Joy Cupcakes. Yum!

I made these and everyone loved them. Chocolate cupcakes filled with coconut filling (made from coconut, sweetened condensed milk and powdered sugar) and Almond butter cream icing.


 

Bridal Shower cupcakes

This is the first batch of cupcakes I have done for an actual client (my cousin!) She wanted cupcakes for her friend's bridal shower. She bought cute white liners and blue sugar flowers and sent them my way. I made chocolate cupcakes with white butter cream icing. Unfortunately, I got done at 10pm and the lighting in my kitchen is the worst, so the pictures don't do these cupcakes any justice. They look yellowish, but were pure white.

 I received great feedback, which is always good!  I can't wait to do my next order.

Easter Cupcakes!

Time to catch up! Life has been busy lately with my sweet 8 month old girl. So for Easter, my sister made the lemon cupcakes, so I had to figure out something else to do. My Mom suggested carrot cake cupcakes with cream cheese frosting. They came out so good! I'm not one to like pieces of stuff in my cake or yogurt or anything, it gives my the willies! But, these are an exception for me! The fresh grated carrot and crushed pineapple was so good!!

Getting festive for Easter!

My sister had a Lia Sophia party, so I figured that was a great place to bring some cupcakes for people to try. I brought some chocolate peanut butter and some strawberry vanilla. The strawberry vanilla is a vanilla cupcake. Then I made home made strawberry mousse which I used for the filling. Then I topped them with some vanilla butter cream icing. Oh and some festive sprinkles! I'm going to make these for Easter, but I think I'll be doing a lemon cupcake instead of vanilla. But, we'll see!
 

Peanut Butter!

One of my latest creations. Chocolate cupcake with peanut butter frosting and mini chocolate chips. These are a crowd favorite. Everyone seems to love them! I made them as a gift for a friend's birthday.

This is the latest cupcake I've made. It is a chocolate coffee cupcake. It is filled with whipped chocolate and mini chocolate chips. The frosting is inspired by cookie dough, and it tastes just like it!

Thinking delicous thoughts

For the past few days I have been thinking of all different flavors of cupcakes. I have planned what I'm going to make for Easter, with the help of a request from my Mom. Lemon cupcakes with strawberry mousse filling and butter cream icing with lemon zest. Maybe topped with a few blueberries.

Well, I had time to get a cup of coffee and have a few sips, start typing, and my precious baby is already awake. She started saying "Dada" a couple days ago!

Once Upon a Time...

So  I guess I will start with an introduction. My name is Shannon, I am 27 and I have been baking for a good portion of my life. I've always loved cooking and baking because growing up, my mom was always making something tasty in the kitchen. Lately I have been getting into baking and decorating cupcakes. Being a stay at home mom to my 6 month old daughter Scarlett, I have a little (yes, very little) time to myself during naps and play time to experiment in the kitchen. Having a very honest fiancee as a taste tester really helps too! I have two of my cupcakes to share so far. On St. Patrick's Day, I made an Irish Cream Cupcake with an Irish butter cream icing. 




The next is a chocolate cupcake dipped in chocolate ganache and topped with a mocha latte butter cream icing. And of course, topped with chocolate jimmies!
My ultimate plan is to hopefully make a new cupcake every week. I hope you will visit and let me know what you think of my cupcakes. There will be many more to come!
